I'm afraid I've cooked so many meals using the pantry principle since I promised you more on the subject, that I can't even remember them all. Life is never boring here on the Frugal Farm, here's a sample of recent events...
*we passed our final inspection on our addition! No carpet, wood floor in the dining area, or trim/baseboards, but we're signed off with the city! YAY!
*the weather has turned to spring and I finally planted peas and onions but haven't gotten to the other spring crops.
*the Frugalbaby got a double ear infection and the pediatrician was out of town so I had to wait 2 hours at urgent care instead. FUN!
*above ear infection's antibiotics caused much intestinal distress and baby gets probiotics, too! read more »
While it is easy to get lost in the frenzy of colored eggs and pastel candies, may we always remember the Atonement and Resurrection of our Lord and Savior Jesus Christ.
I know I promised more on the pantry principle. But life gets in the way! How about a recipe that I invented this weekend in the meantime? Yummy and healthy.
Italian Wheatberry and Orzo Salad
1 cup cooked wheat berries
1/2 cup dry orzo pasta, cooked al dente and drained
1 tbsp red wine vinegar
1 tbsp olive oil
2 oz dry Italian salami, (diced in 1/4 inch dice if a chunk or cut slices in quarters)
1/2 of a red bell pepper, diced in 1/2 inch dice
2 tbsp finely minced red onion
1/4 cup chopped marinated artichoke hearts
salt and pepper
Whisk together vinegar and oil in a medium bowl. Add other ingredients and toss together. Season to taste. Chill.
