2008/12/15 Beef and Quinoa Enchiladas

Sometimes I fill enchiladas with a mixture of chopped meat and cooked rice. Last night I decided to branch out and I mixed finely chopped leftover roast beef with cooked quinoa. I thought it turned out really well and everyone ate it. Quinoa is an ancient grain that is a complete protein all by itself (meaning you don't have to complement it with a legume to make a complete protein) and I happen to have a 50 pound bucket of it.
